Ingredients
1 1/4 cup (110g ) rolled oats
1/3 cup (85g) plain flour 58g
1/4 cup (55g) brown sugar
1/4 teaspoon bicarbonate of soda
1 extra large egg
3/4 cup (180ml) milk
1/2 cup (125ml) natural yoghurt
1 teaspoon vinegar
SPC ProVital Apple & Peach Puree, to serve
SPC ProVital Fruit Salad, to serve
Recipe Method
Step 1
Process oats, plain flour, brown sugar and bicarbonate in a food processor until the mixture is the texture of wholemeal flour. Pour into a large mixing bowl. Whisk together egg, milk, yoghurt and vinegar, add to dry ingredients and stir until just combined.
Step 2
Allow to rest for 1/4 hour. This allows the lumps to soften in the batter. Give a gentle stir.
Step 3
Lightly grease a non-stick frying pan with butter and heat to a medium heat. Add to the pan 2 tablespoonfuls of pancake mixture for each pancake. When bubbles appear, turn the pancake and cook on the other side. To serve, spread apple and peach puree on each plate, top with 2 pancakes and crown with a generous amount of fruit salad.
