Ingredients
4 extra large eggs
1/4 cup (55g) caster sugar
1 teaspoon vanilla paste
1/4 teaspoon ground cinnamon
2 cups (500ml) milk
300ml thickened cream
8 slices fruit loaf, crusts removed
2 tablespoons (40g) butter, softened
300g SPC ProVital Diced Peaches, drained
2 tablespoons demerara sugar
1/2 teaspoon ground nutmeg
dust with icing sugar, to serve
Recipe Method
Step 1
Preheat oven to 160°C (140°C fan-forced). Grease a 5cm-deep, 18cm x 28cm (base) baking dish.
Step 2
Whisk eggs, sugar, vanilla, cinnamon, milk, and cream in a bowl until combined.
Step 3
Spread both sides of each slice of bread with butter. Cut slices of bread in half. Sprinkle a layer of half the peaches on the base of the dish. Arrange bread in rows on top. Sprinkle with remaining peaches.
Step 4
Pour egg mixture over bread and peaches. Sprinkle with demerara sugar and nutmeg. Place in a water bath. Bake for 40 - 45 minutes or until golden brown and custard is just set. Dust with icing sugar to serve.
