Ingredients
2 tablespoons(42g) caster sugar
2 tablespoon (25g) plain flour
1 tablespoon (14g) powdered gelatine
1 cup (250ml) water
1 cup (250ml) orange juice, strained (approx. 2 oranges)
3 tablespoons (60ml) lemon juice, strained
120g SPC ProVital Apple & Peach Puree
1/3 cup (90g) natural yoghurt
120g SPC ProVital Diced Peaches, drained
Recipe Method
Step 1
Place the sugar, flour, gelatine and half the water in a medium saucepan and stir to create a smooth mixture. Add remaining water, orange juice and lemon juice. Use a balloon whisk to whisk until well combined. Bring to the boil over medium heat, stirring constantly. Simmer for 2 minutes until or slightly thickened.
Step 2
Pour the mixture into a heatproof bowl and place in the fridge for 1 hour or until the mixture begins to set around the edges. Stir in SPC ProVital Apple & Peach Puree and yoghurt and transfer to a large mixing bowl. Use an electric beater to beat for 15 minutes or until the mixture is thick and pale.
Step 3
Pour the mixture into 6 x 1 cup size serving glasses. Cover with plastic wrap and place in the fridge for 2 hours or overnight until the mixture is set.
Step 4
Serve topped with SPC ProVital Diced Peaches.

This dessert is a much lighter version of mousse. Doesn’t contain eggs or cream. Based on an English recipe called Flummery. For a tropical twist, substitute SPC ProVital Apple & Peach Puree with SPC ProVital Tropical Puree and top with SPC ProVital Diced Fruit Salad
